Edible tubers related to the North American sunflower, these are prized for their high inulin for gut health and for their resilience as plant for anyone interested in self-sufficiency and food security.
Plant them once, and you'll never need to replant. Each tuber will sprout shoots that develop into a beautiful tall plant developing a mini-yellow edible flower resembling a sunflower. Leave them to die and harvest tubers after they've been exposed to several hard freezes. Or for best flavor and least difficulty digesting the inulin, leave in the ground all winter and harvest in early spring before they resprout.
Every tuber piece left in the ground will resprout into more plants, leaving you with a perennial bed of sunchokes. Don't worry, you'll never harvest all the tubers even if you try! So be sure to plant in a location where you'll never need to move them.
Tubers are frequently roasted, made into soups, or fermented. Flavor is mild, slightly nutty, earthy, and resembling a water chestnut.
